PREPARATION OF BROCCOLI: Cut the broccoli coarsely and blanch it for a few minutes in salted water. Drain the broccoli and blend them with a drizzle of extra virgin olive oil. Put aside to later roast and use to garnish the dish.PORK CHEEK PREPARATION: Cut the pork cheek into slices and place it between two sheets of baking paper. At this point, heat the pan over medium heat with the slices of pork cheek between the sheets of paper until golden brown. At that point, dry the fat with absorbent paper and wait for them to become crunchy. In the same pan, roast the gnocchi with a drizzle of oil, following the times indicated on the package.
COMPOSITION: Arrange the broccoli cream on the plate, place the gnocchi, the slices of crispy pork cheek and the roasted broccoli.
