Other ingredients: beetroot cream (100 gr of Morlacco cheese, 30 gr of milk, 3 gr of beetroot cooking water), wild fennel, purple cabbage, sprouts and EVO oil.

Preparation

Pour the beetroot cream on a plate, place the mini Canederli with speck on it as you like and sprinkle with some wild fennel. Garnish with purple cabbage and sprouts.
