Preparation
PREPARATION DASHI: Starting from cold water, add the dried mushrooms, kombu seaweed, ginger and onion. Bring to a boil over medium heat. Filter with a sieve to have a clear broth. Adjust to taste with soy sauce.PARMESAN WAFER: Sprinkle the grated Parmesan cheese evenly in a cold pan. Cook over medium heat for two minutes, turn off the heat, flip the wafer and cook for another two minutes.
MINI CANEDERLI: At this point all the ingredients are ready, so cook the mini dumplings in the broth as indicated on the package and serve in a bowl. Garnish with the parmesan wafer.
