For sure quinoa is rather exotic when it comes to regional specialities, but we are confident it will soon become a familiar presence on your tables as are gnocchi or pasta.
Quinoa is a grain crop originated in the Andean region of South America where it is grown at high altitudes. It’s an ancient plant already known to the Incas, that made flour from its seeds. It is rich in minerals (iron, magnesium, phosphorus) and a source of vegetable proteins. Our salad is made with three types of quinoa (white, red and black), grilled aubergines, chickpeas and grilled yellow and red peppers, all rounded by a pesto of black olives, almonds, chili and extra virgin olive oil.

PreparationIf you like it cool, just take it out of the fridge, place it in a bowl and serve. If you prefer it warm you can cut a couple of nicks on the front of the tray and pass it in the microwave for 3 minutes at 450W. If you wish you can also add a little extra virgin olive oil.
