“Challenge to Grandma”, a name that is a manifesto for a product so simple that everybody think they can do it – but doing it the right way is a horse of a very different colour!
Defying the legendary gnocchi of Grandma Lina (who left us soon after turning 101), using only steamed fresh potatoes peeled and mashed with eggs, some flour and salt, we succeeded in recreating the gnocchi of our childhood, so velvety and “potato-ish” that you might even abstain from seasoning them!

PreparationStove top: bring to the boil at least 4 litres of salted water. Pour the gnocchi into the pot and skim them after 1 minute using a perforated spoon. Season to taste.

Bocon RecommendDon’t season the skimmed gnocchi all together in a bowl. Better place them directly in each serving plate as you skim them. It is a sad truth that the cook eats last, but it is worth the while! If you choose to season them with a butter and sage sauce just remember to sprinkle them with grated cheese (well, not ANY cheese, please go for a REAL Grana Padano or Parmigiano Reggiano) BEFORE adding the butter: the gnocchi’s heat will melt it and you’ll get a creamier seasoning. Should you be in hurry try them in the microwave: mix them carefully with about 150g of a rather soft sauce or with a lump of butter and a spoonful of milk. Cook on High for about 4 minutes and mix again carefully before serving. Cooking time set for 900W and a 450g pack. Please recalculate according to quantity AND oven performance.
