From the Mediterranean tradition rooted also in Italy since the Arab rule in Sicily, we got the inspiration for our vegetarian version of Cous Cous with chickpeas, grilled peppers, peas, pre-fried eggplants, courgettes and carrots, enriched with savory spices.
PREPARATION TIME: 8 minutes
HOW TO: Pour 1 tablespoon of oil in a large no-stick pan, add 4 tablespoons of water and the frozen cous cous. Cook covered on medium/high heat for about 5 minutes. Than remove the lid and cook for another 3 minutes, stirring occasionally.
