We often tend to consider couscous as a foreign dish, forgetting that the Arab domination of Sicily deeply affected the isle’s gastronomic tradition. In fact, for this seafood couscous we draw our inspirations from the Trapani tradition. The result is a tasty dish that matches squids, mussels, clams and prawns with grilled peppers, fried eggplants, cartos, chickpeas and peas in a spicy but balanced mix.
